But the slow car will be slow for much more time than the fast car! Although, I don't know much about turboed LS engines other than they can make a lot of power.

Every build is a little different, but theoretically they could have some major lag if not set up right, and I don't think I've ever seen one that wasn't pretty laggy.

Have you heard of anyone using them for a track car, or are they mostly just drag strip monsters?

I think the Corvette or the WS6 Firebird were the only things with an LS engine that could actually handle. GTO possibly too, but they were surprisingly heavy. Adding turbo lag on top of that is a recipe for disaster.
